1-1½ cups Ratlami Sev
2 tbsp oil
1 large onion, finely chopped
1 tbsp garlic paste
1 tsp ginger paste
½ -1 tsp red chilli powder
¼ cup fresh tomato puree
1 tsp garam masala
½ tsp turmeric powder (haldi)
1 – 1½ cup milk
½ tsp salt
2 tbsp chopped fresh coriander
INSTRUCTIONS
1. In a pan, heat the oil over medium heat.
2. Add the chopped onion to the hot oil and stir-fry it until it turns a light brown colour.
3. Stir-fry the ginger and garlic paste for a brief period of time.
4. Stir in the turmeric powder.
5. Include salt and tomato purée. Mix thoroughly.
6. Cook the puree for a couple of minutes at low heat.
7. Include garam masala and red chilli powder.
8. Stir in milk thoroughly. Allow the mixture to heat up.
9. Stir in the sev and simmer for two to three minutes.
10. Add chopped coriander as a garnish and serve.
You can eat it with parathas or rotis or serve it on its own with chopped onion, tomato, and lemon juice on top.
